Description This ace-of-spades mushroom is full of pocks and pockets. It grows wild from about April-July in states as far flung as Massachusetts, Michigan and Washington. The Pacific Northwest has a corner on the market, supplying not only the U.S., but also Japan and Europe. TO STORE: Refrigerate. Keep in a paper bag with the top opened so air can circulate -- unlike produce, mushrooms need air to stay fresh. If they are in plastic, they suffocate and lots of moisture accumulates in the bag. Morels can be stored 2 to 5 days. Morels and cream have a natural love affair: the cream fills its crevices, which drink up the chives you've flavored it with. If you're not quite ready for coronary city, stuff low-fat goat cheese into the cavity.
