Description They come exclusively from the Highlands of Northern Scotland. The bird’s diet is composed of heather, tundra and grasses. They are hunted on estates which permit the hunter to keep only a «brace’ or two birds per day and a trophy for the deer. The turnaround time from hunt to D’Artagnan is just two days. In this way, from mid-September to February, we offer the best of Scotland…FRESH. Subject to availability, sometimes hunters miss! Very lean and full flavored, these products are best when slowly roasted or braised.
